Chocolate Zucchini Cake
1/2 cup milk
1/2 teaspoon lemon juice
2 eggs, beaten
1/2 cup butter, softened
1/2 cup vegetable oil
1-3/4 cup sugar
1 teaspoon vanilla
2-1/2 cups flour
4 tablespoons cocoa
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 teaspoon baking soda
2 cups grated zucchini
Mix milk and lemon juice together. Add eggs, butter, oil, vanilla and sugar; mix well.
Add flour, cocoa, baking powder, salt, cinnamon and baking soda; mix well with mixer.
Stir in zucchini by hand.
Pour into lightly greased 9x13 pan.
TOPPING:
1/2 cup ( mini or regular) chocolate chips
1/4 cup sugar
1/3 cup chopped nuts
Sprinkle cake with chips then sugar and finally nuts. Bake at 325 degrees for 40 minutes or until cake tests done.
